Description
A festive and crispy polenta bowl with air-fried toppings, perfect for Christmas.
Ingredients
- 1 cup polenta
- 4 cups water
- 1 tsp salt
- 1 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 1 cup cherry tomatoes
- 1/2 cup diced bell peppers
- 1/2 cup sliced zucchini
- 1/4 cup chopped fresh basil
Instructions
- Bring water to a boil in a saucepan.
- Add salt and slowly whisk in polenta.
- Reduce heat and cook for 20 minutes, stirring occasionally.
- Stir in olive oil and Parmesan cheese.
- Pour polenta into bowls and let it set for 10 minutes.
- Preheat air fryer to 375°F (190°C).
- Toss cherry tomatoes, bell peppers, and zucchini with olive oil.
- Air-fry vegetables for 8-10 minutes until crispy.
- Top polenta bowls with air-fried vegetables and fresh basil.
