Description
A creamy and delicious chicken parmesan soup made easily in your air fryer or crock pot, perfect for a cozy Christmas meal.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup grated parmesan cheese
- 1 cup heavy cream
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 tsp garlic powder
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat the olive oil in your air fryer or crock pot.
- Add the chicken breasts and cook until browned.
- Pour in the chicken broth and diced tomatoes.
- Stir in garlic powder, basil, oregano, salt, and black pepper.
- Cover and cook until the chicken is tender.
- Shred the chicken and return to the pot.
- Add heavy cream and parmesan cheese, stirring until well combined.
- Cook for an additional 5 minutes until heated through.
- Serve hot with extra parmesan cheese if desired.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For a thicker soup, add 1 tbsp of cornstarch mixed with water.
- Substitute heavy cream with half-and-half for a lighter version.
