Ingredients
- 1 lb boneless, skinless chicken breasts
- 2 cups green enchilada sauce
- 1 can (15 oz) black beans, drained
- 1 cup corn kernels
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp salt
- 4 cups chicken broth
- 1/2 cup heavy cream
- Fresh cilantro for garnish
- Tortilla strips for serving
Instructions
- Place chicken breasts in the air fryer or crock pot.
- Add green enchilada sauce, black beans, corn, onion, garlic, cumin, chili powder, and salt.
- Pour chicken broth over the ingredients.
- Cook in the air fryer at 375°F for 20 minutes or in the crock pot on high for 3-4 hours.
- Shred the cooked chicken.
- Stir in heavy cream.
- Serve topped with fresh cilantro and tortilla strips.
Notes
- For extra spice, add diced jalapeños.
