Description
A hearty and comforting pasta fagioli soup made easily in your air fryer and crockpot.
Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) cannellini beans, drained
- 4 cups beef broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp black pepper
- 1/2 cup ditalini pasta
- 2 tbsp olive oil
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in the air fryer basket and brown the ground beef.
- Add onion, carrots, celery, and garlic. Cook until softened.
- Transfer the mixture to the crockpot.
- Add diced tomatoes, beans, beef broth, oregano, basil, and black pepper. Stir well.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- 30 minutes before serving, add the ditalini pasta.
- Serve hot, topped with grated Parmesan cheese.
Notes
- You can substitute ground turkey for beef if preferred.
- For a thicker soup, mash some of the beans before adding.
- Store leftovers in the fridge for up to 3 days.
