A festive and flavorful dish perfect for Christmas, featuring crispy air-fried catfish and spicy sausage served over creamy cheddar jalapeno grits.
Ingredients
- 2 catfish fillets
- 4 spicy sausage links
- 1 cup stone-ground grits
- 4 cups water
- 1 cup shredded cheddar cheese
- 1 jalapeno, diced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1 tbsp olive oil
Instructions
- Preheat air fryer to 400°F.
- Season catfish with salt, pepper, paprika, and garlic powder. Lightly coat with olive oil.
- Air fry catfish for 10-12 minutes, flipping halfway, until crispy.
- Cook sausage in a skillet over medium heat for 8-10 minutes until browned.
- Bring water to a boil in a pot. Stir in grits and cook for 20-25 minutes, stirring occasionally.
- Mix shredded cheese and diced jalapeno into cooked grits.
- Serve catfish and sausage over cheesy jalapeno grits.
Notes
- For extra heat, leave jalapeno seeds in.
- Substitute shrimp for catfish if desired.
- Grits can be made ahead and reheated.
