Ingredients
- 1 lb ground lamb or beef
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley
- 1/2 cup diced cucumber
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1 cup cooked rice or quinoa
- 1/2 cup tzatziki sauce
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, mix ground meat, breadcrumbs, egg, garlic, oregano, cumin, salt, pepper, and parsley.
- Roll the mixture into 1-inch meatballs.
- Place meatballs in the air fryer basket in a single layer.
- Cook for 10-12 minutes, shaking the basket halfway.
- Assemble bowls with rice or quinoa, meatballs, cucumber, tomatoes, and red onion.
- Drizzle with tzatziki sauce before serving.
