Description
A hearty Christmas soup made in the air fryer with high-protein lentils and chicken.
Ingredients
- 1 cup dried lentils
- 2 boneless chicken breasts
- 4 cups chicken broth
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Rinse lentils and set aside.
- Cut chicken into bite-sized pieces.
- Heat olive oil in a pan and sauté onion, carrots, celery, and garlic until softened.
- Add chicken, lentils, broth, thyme, paprika, salt, and pepper.
- Transfer mixture to an air fryer-safe pot.
- Cook at 350°F for 25 minutes, stirring halfway.
- Serve hot.
Notes
- Soak lentils beforehand for quicker cooking.
- Adjust spices based on preference.
- Use vegetable broth for a vegetarian version.
