Description
A light and flavorful soup with Italian turkey sausage and spinach, perfect for a cozy Christmas meal. Made easily in an air fryer for a quick and healthy option.
Ingredients
- 1 lb Italian turkey sausage, casing removed
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- 4 cups fresh spinach
- Salt and black pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat your air fryer to 375°F (190°C) for 3 minutes.
- Add the turkey sausage to the air fryer basket and cook for 8-10 minutes, breaking it into crumbles, until browned.
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened (about 3 minutes).
- Add the cooked sausage, chicken broth, diced tomatoes, basil, oregano, and red pepper flakes. Bring to a simmer.
- Stir in the spinach and cook until wilted (about 2 minutes). Season with salt and black pepper.
- Serve hot, topped with Parmesan cheese if desired.
Notes
- Use lean turkey sausage for a lighter option.
- Adjust red pepper flakes for more or less heat.
- Fresh spinach wilts quickly, so add it just before serving.
