Ingredients

  • 1 small sweet potato (150g), diced
  • 1/2 cup cottage cheese
  • 1 tbsp olive oil
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp chopped pecans
  • 1 tsp sugar-free maple syrup (optional)


Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Toss diced sweet potato with olive oil, cinnamon, and nutmeg.
  3. Air fry for 12–15 minutes, shaking halfway, until tender.
  4. Transfer to a bowl and top with cottage cheese and pecans.
