Description
A festive, low-carb sweet potato bowl made with cottage cheese and cooked in an air fryer. Perfect for a keto-friendly Christmas meal.
Ingredients
- 1 small sweet potato (150g), diced
- 1/2 cup cottage cheese
- 1 tbsp olive oil
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tbsp chopped pecans
- 1 tsp sugar-free maple syrup (optional)
Instructions
- Preheat the air fryer to 375°F (190°C).
- Toss diced sweet potato with olive oil, cinnamon, and nutmeg.
- Air fry for 12–15 minutes, shaking halfway, until tender.
- Transfer to a bowl and top with cottage cheese and pecans.
- Drizzle with sugar-free maple syrup if desired.
Notes
- For extra flavor, add a pinch of salt.
- Adjust sweetness with preferred sugar-free sweetener.
- Use full-fat cottage cheese for a creamier texture.
