A low-carb, keto-friendly zucchini lasagna made in the air fryer for a quick and healthy holiday meal.
Ingredients
- 2 medium zucchinis, sliced lengthwise
- 1 cup ricotta cheese
- 1 egg
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sugar-free marinara sauce
- 1/2 lb ground beef (optional)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- Slice zucchini lengthwise into thin strips and pat dry to remove excess moisture.
- In a bowl, mix ricotta cheese, egg, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- If using ground beef, cook it in a pan until browned and drain excess fat.
- Layer zucchini strips in the air fryer basket, followed by ricotta mixture, marinara sauce, and mozzarella cheese. Repeat layers.
- Cook in the air fryer for 15-20 minutes until cheese is melted and bubbly.
- Let it cool slightly before serving.

- Use a mandoline for even zucchini slices.
- Pat zucchini dry thoroughly to prevent excess moisture.
- Substitute ground beef with turkey or omit for a vegetarian option.
