Ingredients

  • 2 medium zucchinis, sliced lengthwise
  • 1 cup ricotta cheese
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sugar-free marinara sauce
  • 1/2 lb ground beef (optional)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Slice zucchini lengthwise into thin strips and pat dry to remove excess moisture.
  3. In a bowl, mix ricotta cheese, egg, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  4. If using ground beef, cook it in a pan until browned and drain excess fat.
  5. Layer zucchini strips in the air fryer basket, followed by ricotta mixture, marinara sauce, and mozzarella cheese. Repeat layers.
  6. Cook in the air fryer for 15-20 minutes until cheese is melted and bubbly.
  7. Let it cool slightly before serving.
