Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup pitted Kalamata olives
- 1 cup cooked quinoa or couscous
- 1/2 cup Greek yogurt
- 1 tbsp lemon juice
- 1 tsp dried dill
Instructions
- Preheat air fryer to 375°F (190°C).
- Coat chicken with olive oil, oregano, garlic powder, smoked paprika, salt, and black pepper.
- Place chicken in the air fryer basket and cook for 12-15 minutes, flipping halfway, until internal temperature reaches 165°F (74°C).
- Let chicken rest for 5 minutes, then slice into strips.
- In a bowl, mix Greek yogurt, lemon juice, and dill to make the sauce.
- Assemble bowls with quinoa, sliced chicken, tomatoes, cucumber, red onion, and olives.
- Drizzle with yogurt sauce before serving.
