Ingredients

  • 1 cup millet, rinsed
  • 2 cups vegetable broth
  • 1 cup diced sweet potato
  • 1 cup chopped Brussels sprouts
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced red onion
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta cheese (optional)


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Cook millet in vegetable broth according to package instructions, then set aside.
  3. Toss sweet potato, Brussels sprouts, bell pepper, and onion with olive oil, thyme, salt, and pepper.
  4. Air fry vegetables for 12-15 minutes, shaking halfway, until tender and slightly browned.
  5. Divide cooked millet between bowls and top with roasted vegetables.
  6. Sprinkle with feta cheese if desired.
