A festive and healthy Christmas meal featuring millet and roasted vegetables, prepared quickly in an air fryer.
Ingredients
- 1 cup millet, rinsed
- 2 cups vegetable broth
- 1 cup diced sweet potato
- 1 cup chopped Brussels sprouts
- 1/2 cup diced red bell pepper
- 1/2 cup diced red onion
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Preheat air fryer to 375°F (190°C).
- Cook millet in vegetable broth according to package instructions, then set aside.
- Toss sweet potato, Brussels sprouts, bell pepper, and onion with olive oil, thyme, salt, and pepper.
- Air fry vegetables for 12-15 minutes, shaking halfway, until tender and slightly browned.
- Divide cooked millet between bowls and top with roasted vegetables.
- Sprinkle with feta cheese if desired.
