Description

A festive and healthy fish bowl with orange and ginger flavors, perfect for a Christmas meal.


Ingredients

  • 2 fillets of white fish (such as cod or tilapia)
  • 1 orange, juiced and zested
  • 1 tbsp fresh ginger, grated
  • 1 tbsp olive oil
  • 1 cup cooked quinoa
  • 1 cup baby spinach
  • 1/2 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp honey
  • Salt and pepper to taste


Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a bowl, mix the orange juice, orange zest, grated ginger, olive oil, soy sauce, honey, salt, and pepper.
  3. Place the fish fillets in the marinade and let them sit for 10 minutes.
  4. Transfer the fish to the air fryer basket and cook for 8-10 minutes, flipping halfway, until fully cooked.
  5. Assemble the bowl with cooked quinoa, baby spinach, avocado slices, and red onion.
  6. Place the cooked fish on top and drizzle with remaining marinade if desired.
