Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup pesto sauce
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- Preheat the air fryer to 375°F (190°C).
- Cut chicken breasts into bite-sized pieces.
- In a bowl, mix breadcrumbs, Parmesan, salt, and pepper.
- Dip chicken pieces in beaten egg, then coat with the breadcrumb mixture.
- Place chicken in the air fryer basket in a single layer. Drizzle with olive oil.
- Cook for 10 minutes, flipping halfway, until golden and crispy.
- Remove chicken and toss with pesto sauce.
- Return to the air fryer for 2 minutes to warm the pesto.
- Serve in bowls with marinara sauce, topped with mozzarella and fresh basil.
