Description
A festive and flavorful chicken casserole with Southwestern spices, perfect for Christmas dinner.
Ingredients
- 2 lbs boneless, skinless chicken breasts, cubed
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- 1/2 cup diced red bell pepper
- 1/2 cup diced onion
- 1 tbsp taco seasoning
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat air fryer to 375°F.
- In a large bowl, mix chicken, black beans, corn, tomatoes, bell pepper, onion, taco seasoning, chili powder, cumin, garlic powder, salt, and black pepper.
- Drizzle olive oil over the mixture and toss to coat.
- Transfer mixture to an air fryer-safe baking dish.
- Cook in the air fryer for 20 minutes, stirring halfway.
- Sprinkle cheese on top and cook for an additional 5 minutes until melted.
- Serve hot.
Notes
- For extra heat, add diced jalapeños.
- Serve with tortilla chips or rice.
- Store leftovers in an airtight container for up to 3 days.
