Ingredients
- 1 lb steak (sirloin or flank)
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- Season the steak with chili powder, cumin, garlic powder, salt, and pepper.
- Place the steak in the air fryer basket and cook for 8-10 minutes for medium-rare, flipping halfway.
- Remove the steak and let it rest for 5 minutes before slicing.
- In a large bowl, combine rice, black beans, corn, avocado, cherry tomatoes, red onion, and cilantro.
- Drizzle with lime juice and olive oil, then toss gently.
- Top the salad with sliced steak and serve immediately.
Notes
- For a spicier kick, add diced jalapeños or hot sauce.
- Substitute quinoa for rice if preferred.
