Ingredients

  • 1 lb steak (sirloin or flank)
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Season the steak with chili powder, cumin, garlic powder, salt, and pepper.
  3. Place the steak in the air fryer basket and cook for 8-10 minutes for medium-rare, flipping halfway.
  4. Remove the steak and let it rest for 5 minutes before slicing.
  5. In a large bowl, combine rice, black beans, corn, avocado, cherry tomatoes, red onion, and cilantro.
  6. Drizzle with lime juice and olive oil, then toss gently.
  7. Top the salad with sliced steak and serve immediately.
