Description
Crispy air fryer summer rolls packed with fresh vegetables and served with a tangy dipping sauce.
Ingredients
- 8 rice paper wrappers
- 1 cup shredded carrots
- 1 cup shredded cabbage
- 1/2 cup thinly sliced bell peppers
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh mint leaves
- 8 cooked shrimp (peeled and deveined)
- 1 tbsp vegetable oil
Instructions
- Soak rice paper wrappers in warm water for 10 seconds
- Lay wrapper flat and add vegetables, herbs, and shrimp
- Roll tightly, tucking in sides as you go
- Brush rolls lightly with oil
- Air fry at 375°F for 8 minutes, flipping halfway
- Serve with dipping sauce
Notes
- Keep rice paper damp while working
- Don’t overfill wrappers
- Serve immediately for best texture
