Description

Crispy air fryer summer rolls packed with fresh vegetables and served with a tangy dipping sauce.


Ingredients

  • 8 rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 1/2 cup thinly sliced bell peppers
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh mint leaves
  • 8 cooked shrimp (peeled and deveined)
  • 1 tbsp vegetable oil


Instructions

  1. Soak rice paper wrappers in warm water for 10 seconds
  2. Lay wrapper flat and add vegetables, herbs, and shrimp
  3. Roll tightly, tucking in sides as you go
  4. Brush rolls lightly with oil
  5. Air fry at 375°F for 8 minutes, flipping halfway
  6. Serve with dipping sauce
