Description
A quick and flavorful Thai peanut curry made with air fryer drumsticks. This dish combines tender chicken with a rich, creamy peanut sauce for a delicious meal.
Ingredients
- 8 chicken drumsticks
- 1/4 cup peanut butter
- 1 can (14 oz) coconut milk
- 2 tbsp soy sauce
- 1 tbsp curry powder
- 1 tsp garlic powder
- 1 tsp ginger powder
- 1 tbsp brown sugar
- 1 tbsp lime juice
- 1/2 tsp red pepper flakes (optional)
Instructions
- Preheat the air fryer to 375°F (190°C).
- Place the drumsticks in the air fryer basket and cook for 20 minutes, flipping halfway.
- In a saucepan, combine peanut butter, coconut milk, soy sauce, curry powder, garlic powder, ginger powder, brown sugar, lime juice, and red pepper flakes.
- Simmer the sauce on low heat for 5 minutes, stirring occasionally.
- Toss the cooked drumsticks in the peanut sauce and serve hot.
Notes
- For extra crispiness, spray the drumsticks with oil before air frying.
- Adjust red pepper flakes for desired spice level.
- Serve with rice or steamed vegetables.
