A quick and flavorful pasta dish featuring tender chicken, crispy bruschetta topping, and air-fried goodness perfect for Thanksgiving or any gathering.
Ingredients
- 1 lb boneless, skinless chicken breasts, cubed
- 8 oz pasta (penne or rotini)
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 cup shredded mozzarella
- 1/2 cup grated parmesan
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat air fryer to 375°F.
- Toss chicken with 1 tbsp olive oil, salt, and pepper. Air fry for 10 minutes, shaking halfway.
- Cook pasta according to package instructions. Drain.
- Mix tomatoes, basil, garlic, and remaining olive oil in a bowl.
- Combine cooked pasta, chicken, and bruschetta mixture in a large bowl.
- Sprinkle cheeses on top. Air fry for 3-4 minutes until cheese melts.
- Serve immediately.
Notes
- Use gluten-free pasta if needed.
- Add red pepper flakes for heat.
- Store leftovers in an airtight container for up to 3 days.
