Description
A comforting soup inspired by shepherd’s pie, made with Thanksgiving flavors and cooked in an air fryer.
Ingredients
- 1 lb ground turkey
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup frozen peas
- 1 cup corn kernels
- 2 cups mashed potatoes
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Preheat air fryer to 375°F.
- Brown ground turkey in a pot over medium heat.
- Add onion, carrots, celery, and garlic. Cook until softened.
- Pour in chicken broth and bring to a simmer.
- Stir in peas, corn, thyme, and rosemary. Simmer for 10 minutes.
- Transfer soup to an air fryer-safe dish.
- Top with mashed potatoes.
- Air fry for 8-10 minutes until potatoes are golden.
- Season with salt and pepper.
- Serve hot.
Notes
- Use leftover mashed potatoes for convenience.
- Adjust broth thickness by adding water if needed.
