Description

Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 2 cups mixed vegetables (carrots, potatoes, celery)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf


Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. In a bowl, toss the beef cubes with olive oil, salt, pepper, and thyme.
  3. Place the beef in the air fryer basket and cook for 10 minutes, shaking halfway.
  4. Add the diced onion, minced garlic, and mixed vegetables to the basket.
  5. Pour in the beef broth and add the bay leaf.
  6. Cook for another 20-25 minutes, stirring occasionally, until the beef is tender and the vegetables are cooked.
  7. Remove the bay leaf before serving.
