Description
A hearty and flavorful stew made with tender beef and vegetables, perfect for Thanksgiving. Cooked in an air fryer for convenience and speed.
Ingredients
- 1 lb beef stew meat, cut into cubes
- 2 cups mixed vegetables (carrots, potatoes, celery)
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a bowl, toss the beef cubes with olive oil, salt, pepper, and thyme.
- Place the beef in the air fryer basket and cook for 10 minutes, shaking halfway.
- Add the diced onion, minced garlic, and mixed vegetables to the basket.
- Pour in the beef broth and add the bay leaf.
- Cook for another 20-25 minutes, stirring occasionally, until the beef is tender and the vegetables are cooked.
- Remove the bay leaf before serving.
Notes
- Cut the beef and vegetables into even sizes for uniform cooking.
- Adjust seasoning to taste.
- Serve hot with crusty bread or over mashed potatoes.
