A fresh and tangy salad with blueberries, goat cheese, and spring mix, enhanced by a quick air fryer crunch.
Ingredients
- 4 cups spring mix
- 1/2 cup fresh blueberries
- 1/4 cup crumbled goat cheese
- 1/4 cup sliced almonds
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat air fryer to 350°F for 3 minutes.
- Toss almonds in 1 tsp olive oil and air fry for 2-3 minutes until lightly toasted.
- In a large bowl, combine spring mix, blueberries, and goat cheese.
- Whisk together remaining olive oil, honey, balsamic vinegar, salt, and pepper.
- Drizzle dressing over salad and toss gently.
- Top with toasted almonds and serve immediately.
