Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup shredded coconut
  • 1/2 cup panko breadcrumbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup honey
  • 2 tbsp Dijon mustard


Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Set up three bowls: one with flour, one with beaten eggs, and one with a mix of coconut, panko, salt, and pepper.
  3. Coat each shrimp first in flour, then in egg, and finally in the coconut mixture.
  4. Place shrimp in the air fryer basket in a single layer.
  5. Cook for 8-10 minutes, flipping halfway, until golden and crispy.
  6. Mix honey and mustard to make the dipping sauce.
  7. Serve shrimp warm with the honey mustard sauce.
