Description
Crispy cod fillets cooked in an air fryer, served in fresh lettuce wraps for a light and healthy meal.
Ingredients
- 2 cod fillets (6 oz each)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 large lettuce leaves (butter or romaine)
- 1/4 cup shredded carrots
- 1/4 cup sliced cucumber
- 2 tbsp chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Preheat air fryer to 400°F for 3 minutes.
- Pat cod fillets dry with paper towels.
- Rub fillets with olive oil, then season with garlic powder, paprika, salt, and pepper.
- Place fillets in air fryer basket in single layer.
- Cook for 8-10 minutes until flaky and golden.
- Remove fish and break into chunks.
- Arrange lettuce leaves on plates.
- Divide fish, carrots, cucumber, and cilantro among lettuce leaves.
- Serve with lime wedges.
Notes
- Check fish doneness with fork – it should flake easily.
- Use any firm white fish if cod isn’t available.
- Add sriracha mayo for spicy variation.
