A quick and creamy pasta salad made in the air fryer, perfect for a light lunch or side dish.
Ingredients
- 8 oz pasta (rotini or penne)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
Instructions
- Cook pasta in the air fryer at 360°F for 10 minutes, shaking halfway.
- In a bowl, mix mayonnaise, sour cream, lemon juice, garlic powder, salt, and pepper.
- Add cooked pasta, tomatoes, red onion, and parsley to the dressing.
- Toss until well coated. Chill for 30 minutes before serving.
Notes
- Use gluten-free pasta if needed.
- Add protein like grilled chicken or chickpeas for a heartier meal.
