Description
A quick and healthy vegetable dish cooked in an air fryer with Mediterranean spices for a crispy texture.
Ingredients
- 2 cups mixed vegetables (zucchini, bell peppers, eggplant)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat air fryer to 375°F (190°C).
- Chop vegetables into bite-sized pieces.
- Toss vegetables with olive oil and spices.
- Place vegetables in the air fryer basket in a single layer.
- Cook for 12-15 minutes, shaking halfway.
- Serve warm.
