Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb white fish, cut into chunks
- 1 cup shredded cheese
- 8 corn tortillas
- 1 cup enchilada sauce
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your air fryer to 375°F.
- In a bowl, mix shrimp, fish, onions, bell peppers, chili powder, cumin, salt, and black pepper.
- Warm the tortillas to make them pliable.
- Fill each tortilla with the seafood mixture and a sprinkle of cheese.
- Roll the tortillas and place them seam-side down in the air fryer basket.
- Pour enchilada sauce over the rolled tortillas.
- Top with remaining cheese.
- Air fry for 10-12 minutes until cheese is melted and bubbly.
- Serve hot.
