Description

This air fryer veggie quesadilla is a quick and easy dish packed with flavor.


Ingredients

  • 4 whole wheat tortillas
  • 1 cup shredded cheese
  • 1 cup bell peppers, diced
  • 1 cup spinach, chopped
  • 1/2 cup onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. In a bowl, mix the bell peppers, spinach, onion, olive oil, garlic powder, salt, and pepper.
  3. Place one tortilla in the air fryer basket.
  4. Add half of the cheese on the tortilla.
  5. Spread the veggie mixture over the cheese.
  6. Add the remaining cheese on top.
  7. Cover with another tortilla.
  8. Air fry for 8-10 minutes until golden brown and crispy.
  9. Remove and cut into wedges.
  10. Serve hot.
