Ingredients

  • 1 cup rice
  • 1.5 cups chicken or seafood broth
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb mussels, cleaned
  • 1/2 lb calamari, sliced
  • 1/2 cup diced tomatoes
  • 1/2 cup frozen peas
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp saffron threads
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving


Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a bowl, mix rice, broth, diced tomatoes, onion, garlic, paprika, saffron, olive oil, salt, and pepper.
  3. Pour the mixture into an air fryer-safe pan or dish.
  4. Cook in the air fryer for 10 minutes.
  5. Add shrimp, mussels, calamari, and peas. Stir gently.
  6. Cook for another 10-12 minutes until the seafood is done and rice is tender.
  7. Serve with lemon wedges.
