Description
Crispy eggplant sticks made in an air fryer for a healthier snack.
Ingredients
- 1 medium eggplant
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 2 eggs
- 1/4 cup flour
Instructions
- Cut eggplant into sticks.
- Mix breadcrumbs, Parmesan, garlic powder, paprika, and salt in a bowl.
- Dip eggplant sticks in flour, then eggs, then breadcrumb mixture.
- Place sticks in air fryer basket in a single layer.
- Cook at 375°F for 10-12 minutes, flipping halfway.
Notes
- Serve with marinara sauce.
- For extra crispiness, spray lightly with oil.
