Description
Crispy, cheesy eggplant parmesan made easy in the air fryer.
Ingredients
- 1 medium eggplant, sliced into 1/2-inch rounds
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, beaten
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
Instructions
- Preheat air fryer to 375°F (190°C).
- Mix breadcrumbs, Parmesan, Italian seasoning, garlic powder, salt, and pepper in a bowl.
- Dip eggplant slices in beaten egg, then coat with breadcrumb mixture.
- Lightly spray or brush eggplant slices with olive oil.
- Arrange slices in a single layer in the air fryer basket.
- Cook for 8 minutes, flip, then cook for another 5 minutes.
- Top each slice with marinara sauce and mozzarella cheese.
- Air fry for 2 more minutes until cheese melts.

- Slice eggplant evenly for consistent cooking.
- Use panko breadcrumbs for extra crunch.
- Serve immediately for best texture.
