Description
Crispy and flavorful eggplant wedges made in the air fryer. A quick and healthy snack or side dish.
Ingredients
- 1 medium eggplant, cut into wedges
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp black pepper
Instructions
- Preheat the air fryer to 375°F (190°C).
- Toss eggplant wedges with olive oil, salt, garlic powder, paprika, and black pepper.
- Place wedges in the air fryer basket in a single layer.
- Cook for 12-15 minutes, flipping halfway, until golden and crispy.
- Serve immediately.
Notes
- Cut eggplant evenly for even cooking.
- Do not overcrowd the air fryer basket.
- Adjust seasoning to taste.
