Description
A fresh and easy pasta salad with the flavors of Caprese, made quickly in your air fryer.
Ingredients
- 8 oz pasta (penne or fusilli)
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella, cubed
- 1/4 cup fresh basil, chopped
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook pasta according to package instructions, then drain and rinse with cold water.
- Preheat air fryer to 350°F (175°C).
- In a bowl, toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper.
- Air fry tomatoes for 5 minutes until slightly softened.
- In a large bowl, combine cooked pasta, air-fried tomatoes, mozzarella, and basil.
- Whisk together remaining olive oil, balsamic vinegar, and minced garlic.
- Pour dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature.
Notes
- Use fresh mozzarella for best texture.
- Add a pinch of red pepper flakes for a slight kick.
- Store leftovers in an airtight container for up to 2 days.
