Description

A healthy and flavorful salad made with green lentils, fresh herbs, and a light dressing, cooked quickly in an air fryer.


Ingredients

  • 1 cup green lentils, rinsed
  • 2 cups water
  • 1 tbsp olive oil
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped red onion
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. Combine lentils and water in an air fryer-safe dish.
  3. Cook for 15 minutes, stirring halfway.
  4. Drain excess water and let lentils cool slightly.
  5. Toss lentils with olive oil, parsley, mint, red onion, lemon juice, salt, and pepper.
  6. Serve warm or chilled.
