Description
A healthy and flavorful salad made with green lentils, fresh herbs, and a light dressing, cooked quickly in an air fryer.
Ingredients
- 1 cup green lentils, rinsed
- 2 cups water
- 1 tbsp olive oil
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped red onion
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat air fryer to 375°F (190°C).
- Combine lentils and water in an air fryer-safe dish.
- Cook for 15 minutes, stirring halfway.
- Drain excess water and let lentils cool slightly.
- Toss lentils with olive oil, parsley, mint, red onion, lemon juice, salt, and pepper.
- Serve warm or chilled.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Add diced cucumber or cherry tomatoes for extra freshness.
