Description
A quick and flavorful sandwich made with homemade olive tapenade, fresh vegetables, and your choice of bread, all crisped to perfection in an air fryer.
Ingredients
- 1 cup pitted kalamata olives
- 2 tbsp capers
- 2 cloves garlic
- 2 tbsp extra virgin olive oil
- 1 tsp lemon juice
- 4 slices sourdough bread
- 1/2 cup sliced roasted red peppers
- 1/2 cup fresh arugula
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Combine olives, capers, garlic, olive oil, and lemon juice in a food processor. Pulse until coarsely chopped.
- Spread the tapenade evenly on two slices of bread.
- Layer roasted red peppers, arugula, and feta cheese (if using) on top.
- Top with the remaining bread slices to form sandwiches.
- Preheat air fryer to 375°F (190°C).
- Place sandwiches in the air fryer basket and cook for 4-5 minutes, flipping halfway, until crispy and golden.
- Serve immediately.
Notes
- Use gluten-free bread if needed.
- Store leftover tapenade in an airtight container for up to 3 days.
- Add grilled chicken or turkey for extra protein.
