Description
Crispy and flavorful zucchini wedges coated with parmesan and breadcrumbs, cooked perfectly in an air fryer.
Ingredients
- 2 medium zucchinis, cut into wedges
- 1/2 cup grated parmesan cheese
- 1/2 cup breadcrumbs
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- Cooking spray
Instructions
- Preheat air fryer to 375°F (190°C).
- Mix parmesan, breadcrumbs, garlic powder, oregano, salt, and pepper in a bowl.
- Dip zucchini wedges in beaten eggs, then coat with the breadcrumb mixture.
- Lightly spray air fryer basket with cooking spray.
- Arrange zucchini wedges in a single layer in the air fryer.
- Cook for 10-12 minutes, flipping halfway, until golden and crispy.
- Serve immediately.
Notes
- For extra crispiness, lightly spray wedges with oil before cooking.
- Use panko breadcrumbs for a crunchier texture.
- Store leftovers in an airtight container for up to 2 days.
