Ingredients
- 2 large red bell peppers
- 4 slices of whole grain bread
- 2 tbsp olive oil
- 1 clove garlic, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup fresh basil leaves
- 1/4 cup feta cheese, crumbled
Instructions
- Preheat the air fryer to 375°F (190°C).
- Cut the red bell peppers into thick slices and toss them with olive oil, minced garlic, salt, and black pepper.
- Place the peppers in the air fryer basket and cook for 10 minutes, shaking halfway through.
- Toast the bread slices lightly.
- Assemble the sandwich by layering roasted peppers, fresh basil, and crumbled feta cheese between the bread slices.
- Serve immediately.
Notes
- You can add a drizzle of balsamic glaze for extra flavor.
- For a vegan version, replace feta cheese with a plant-based alternative.
