Description
A quick and easy recipe for seafood enchiladas made in an air fryer.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb crab meat
- 8 corn tortillas
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat air fryer to 375°F.
- Mix shrimp, crab meat, cumin, chili powder, garlic powder, salt, and pepper in a bowl.
- Heat tortillas in a skillet with olive oil until soft.
- Fill each tortilla with seafood mixture and roll tightly.
- Place enchiladas seam-side down in the air fryer basket.
- Cook for 10 minutes.
- Top with cheese and cook for 2 more minutes.
- Serve with sour cream and cilantro.
