Description
A quick and delicious dish combining crispy shrimp scampi with golden wedges, all made easily in your air fryer.
Ingredients
- 1 lb shrimp, peeled and deveined
- 2 large potatoes, cut into wedges
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1/4 cup butter, melted
- 1/4 tsp red pepper flakes
- 1 tbsp lemon juice
- 1/4 cup parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat air fryer to 400°F.
- Toss potato wedges with 1 tbsp olive oil, salt, and pepper. Air fry for 15 minutes, shaking halfway.
- Mix shrimp with melted butter, garlic, red pepper flakes, lemon juice, and remaining olive oil.
- Add shrimp to the air fryer basket and cook for 5-7 minutes until pink.
- Sprinkle with parsley and serve hot.
