Description
A flavorful and healthy salad featuring southwest-seasoned chicken cooked in an air fryer, served with fresh vegetables and a zesty dressing.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp southwest seasoning
- 1 tbsp olive oil
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/2 cup corn kernels
- 1/4 cup black beans, rinsed
- 1/4 cup shredded cheddar cheese
- 2 tbsp lime juice
- 2 tbsp sour cream
- 1 tbsp chopped cilantro
Instructions
- Preheat air fryer to 375°F.
- Coat chicken with olive oil and southwest seasoning.
- Air fry chicken for 12-15 minutes, flipping halfway, until internal temperature reaches 165°F.
- Let chicken rest for 5 minutes, then slice.
- In a large bowl, combine mixed greens, tomatoes, avocado, corn, black beans, and cheese.
- Top salad with sliced chicken.
- Whisk lime juice and sour cream, drizzle over salad.
- Sprinkle with cilantro before serving.
