Description

Crispy and light summer rolls made in an air fryer, packed with fresh vegetables and served with a dipping sauce.


Ingredients

  • 8 rice paper wrappers
  • 1 cup shredded lettuce
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup cooked vermicelli noodles
  • 1/4 cup hoisin sauce
  • 1 tbsp soy sauce
  • 1 tsp sriracha (optional)


Instructions

  1. Soak rice paper wrappers in warm water for 10 seconds until soft.
  2. Lay each wrapper flat and add lettuce, carrots, cucumber, mint, cilantro, and noodles.
  3. Fold sides inward and roll tightly.
  4. Preheat air fryer to 375°F (190°C).
  5. Lightly spray rolls with oil and air fry for 5-6 minutes until crispy.
  6. Mix hoisin, soy sauce, and sriracha for dipping.
  7. Serve immediately.

Notes

  • Keep rice paper moist to prevent cracking.
  • Adjust spice level by adding more or less sriracha.
  • Use fresh herbs for best flavor.
