Description
Crispy and light summer rolls made in an air fryer, packed with fresh vegetables and served with a dipping sauce.
Ingredients
- 8 rice paper wrappers
- 1 cup shredded lettuce
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/2 cup cooked vermicelli noodles
- 1/4 cup hoisin sauce
- 1 tbsp soy sauce
- 1 tsp sriracha (optional)
Instructions
- Soak rice paper wrappers in warm water for 10 seconds until soft.
- Lay each wrapper flat and add lettuce, carrots, cucumber, mint, cilantro, and noodles.
- Fold sides inward and roll tightly.
- Preheat air fryer to 375°F (190°C).
- Lightly spray rolls with oil and air fry for 5-6 minutes until crispy.
- Mix hoisin, soy sauce, and sriracha for dipping.
- Serve immediately.
Notes
- Keep rice paper moist to prevent cracking.
- Adjust spice level by adding more or less sriracha.
- Use fresh herbs for best flavor.
