Description
A quick and easy seafood enchilada recipe made in the air fryer.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb scallops
- 1 cup shredded cheese
- 6 flour tortillas
- 1 cup enchilada sauce
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat air fryer to 375°F.
- Season shrimp and scallops with garlic powder, cumin, salt, and pepper.
- Cook seafood in the air fryer for 5 minutes.
- Fill tortillas with seafood and cheese, then roll.
- Place enchiladas in the air fryer basket and top with sauce.
- Cook for 8 minutes until cheese melts.

- Use fresh seafood for best results.
- Adjust cooking time based on air fryer model.
