Description
A healthy version of classic Eggplant Parmesan made in an air fryer.
Ingredients
- 2 medium eggplants, sliced
- 1 cup breadcrumbs
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- Slice the eggplants and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
- Rinse and pat the eggplant slices dry.
- Coat each slice with breadcrumbs mixed with Italian seasoning.
- Place the eggplant slices in the air fryer basket in a single layer.
- Air fry for 15 minutes, flipping halfway through.
- In a baking dish, layer eggplant slices, marinara sauce, mozzarella, and Parmesan cheese.
- Repeat layers until all ingredients are used, finishing with cheese on top.
- Return the dish to the air fryer and cook for an additional 10 minutes.
- Let cool before serving.

- Adjust cooking time based on thickness of eggplant slices.
- Use gluten-free breadcrumbs for a gluten-free option.
- Top with fresh basil before serving for added flavor.
