Description

A healthy version of classic Eggplant Parmesan made in an air fryer.


Ingredients

  • 2 medium eggplants, sliced
  • 1 cup breadcrumbs
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  3. Rinse and pat the eggplant slices dry.
  4. Coat each slice with breadcrumbs mixed with Italian seasoning.
  5. Place the eggplant slices in the air fryer basket in a single layer.
  6. Air fry for 15 minutes, flipping halfway through.
  7. In a baking dish, layer eggplant slices, marinara sauce, mozzarella, and Parmesan cheese.
  8. Repeat layers until all ingredients are used, finishing with cheese on top.
  9. Return the dish to the air fryer and cook for an additional 10 minutes.
  10. Let cool before serving.
