Crispy potato bites stuffed with broccoli and cheese, cooked in an air fryer for a healthier twist.


Ingredients

  • 2 large potatoes, peeled and diced
  • 1 cup broccoli florets, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil


Instructions

  1. Boil potatoes until tender, then mash them.
  2. Mix mashed potatoes with broccoli, cheese, garlic powder, onion powder, salt, and pepper.
  3. Form the mixture into small bite-sized balls.
  4. Dip each ball in beaten egg, then coat with breadcrumbs.
  5. Preheat air fryer to 375°F (190°C).
  6. Lightly brush or spray the bites with olive oil.
  7. Air fry for 10-12 minutes, flipping halfway, until golden brown.
