Description
Crispy potato bites stuffed with broccoli and cheese, cooked in an air fryer for a healthier twist.
Ingredients
- 2 large potatoes, peeled and diced
- 1 cup broccoli florets, finely chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup breadcrumbs
- 1 egg, beaten
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Boil potatoes until tender, then mash them.
- Mix mashed potatoes with broccoli, cheese, garlic powder, onion powder, salt, and pepper.
- Form the mixture into small bite-sized balls.
- Dip each ball in beaten egg, then coat with breadcrumbs.
- Preheat air fryer to 375°F (190°C).
- Lightly brush or spray the bites with olive oil.
- Air fry for 10-12 minutes, flipping halfway, until golden brown.
- Serve warm with your favorite dip.
Notes
- Use fresh broccoli for better texture.
- Adjust seasoning to taste.
- For extra crispiness, spray with a bit more oil.
- Store leftovers in an airtight container for up to 2 days.
