Description
Quick and easy mini quesadilla bites made in the air fryer. Perfect for snacks or appetizers.
Ingredients
- 4 small flour tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup cooked chicken, diced (optional)
- 1 tbsp taco seasoning
- 1 tbsp olive oil
Instructions
- Cut tortillas into small circles using a cookie cutter or glass.
- Mix cheese, chicken, and taco seasoning in a bowl.
- Place a spoonful of the mixture on half of each tortilla circle.
- Fold the tortilla over to create a half-moon shape.
- Brush both sides with olive oil.
- Preheat air fryer to 375°F (190°C).
- Place quesadilla bites in the air fryer basket in a single layer.
- Cook for 3-4 minutes, flipping halfway, until golden and crispy.
- Serve warm with salsa or sour cream.

- Use any cheese or protein you prefer.
